A tasty and filling dish for colder days. Standard recipes already tend towards low carb (except the mashed potatoes!), but the cauliflower mash fixes that and doesn't really taste much different.

- Preheat oven to 350 f - Cook the onions, peppers, celery, and salt with the oil until softened. - Add the garlic, tomato paste, and herbs, cook for an additional 1-2 minutes. - Add the ground beef and cook until browned, breaking up with spatula/spoon. - Add the remaining ingredients and cook until the liquid is mostly gone. - If necessary add a little bit of xanthan gum to thicken. - Transfer to a casserole dish, top with cauliflower mash and shredded cheese - Bake for about 30 minutes, finish under the broiler for a couple minutes to further brown the cheese, if desired. |
