Lime Popsicles

Nice, simple lime popsicles that refresh when it's really hot outside.

Ingredients	Directions
2 cups water 2/3 cup sugar 4 1-inch strips of lime zest 3/4 cup freshly squeezed lime juice	In a small saucepan, combine the water, sugar, and lime zest, and heat over medium, stirring frequently, until the sugar has dissolved. Remove from heat and let cool to room temperature. Strain through a fine mesh strainer and discard the zest. Stir in the lime juice. Pour into Popsicle molds and freeze until solid 4-5 hours, depending on the size of the mold.

~~I don't have a special zester, but I find I can zest pretty well with my vegetable peeler.~~

Use a micro plane to zest the limes.
