50g (1 large) egg
40g (1/2 cup) shredded mozzarella
1 tsp coconut flour
1/4 tsp xanthan gum
1/4 tsp baking powder
1/4 tsp garlic powder, optional
1/4 tsp Italian seasoning, optional
A pinch of salt

In a small bowl, mix the dry ingredients until combined. This keeps the xanthan gum from clumping.
In a measuring cup beat the egg and mix in the mozzarella cheese
Add the dry ingredients to the wet ingredients and beat/whisk until combined.
Use half of the batter in a Dash Mini waffle maker for each “piece” and cook for 4-5 minutes.
