2 tbsp chili powder
1 tbsp cumin powder
2 tsp cornstarch
2 tsp kosher salt (less if table salt)
1 1/2 tsp hot smoked paprika
1 tsp ground coriander
1/2 tsp cayenne pepper (or chipotle powder)
A few grinds of black pepper

Cooking the filling:
Dice 1/2 of a medium yellow onion
Sweat onion until lightly brown in a large skillet
Add ground beef, break up and brown, stirring occasionally
If there is a lot of fat rendered, remove some (leave some for delicious)
Add a couple tbsp of tomato paste and fry briefly
Add 3-4 tbsp of the above mix and 4-6 oz of water
Mix thoroughly and cook for a few minutes until the flavors bloom and filling has thickened
