Bacon Spinach & Artichoke Dip

A rare keto dish that tastes like the real thing.

Ingredients Directions

  • 2 large rashers of bacon
  • 2.5 oz fresh spinach
  • 4 oz cream cheese, softened
  • 2 tbsp sour cream
  • 2 tbsp Greek yogurt
  • 2 tbsp artichoke hearts, chopped
  • 2 tbsp sun-dried tomatoes, chopped
  • 1 1/4 oz Pecorino Romano cheese, grated
  • 1 tbsp fresh parsley, chopped
  • 3 cloves of garlic, crushed
  • 2 tbsp lemon juice
  • Salt and pepper to taste

  1. Heat the oven to 350.
  2. Measure out the cream cheese, leave out to soften. You may use the microwave briefly to speed it along.
  3. Fry the bacon until crisp, set aside, then cook the spinach until wilted in the left over grease.
  4. Crumble the bacon and mix all ingredients together in a bowl.
  5. Transfer to 1 large, or 4 individual sized oven safe baking dishes. Bake for 20-25 minutes, then finish under the broiler for 3-4 minutes.

Notes

Possible substitutions:

  • I cut the sour cream half-and-half with yogurt, it could be all sour cream (or maybe even all yogurt)
  • Parmesan for the Pecorino cheese
  • Roasted garlic
