Bacon Blue Cheese Potato Salad
Bacon. Blue cheese. Potato salad.

3 lbs red potatoes
3/4 cup mayonaise
1/3 cup sour cream
7 strips bacon, cooked and chopped or crumbled
4 oz blue cheese, crumbled
4 stalks green onion, chopped
1 tbsp cider vinegar
1 tbsp Dijon mustard
Salt to taste
Black pepper to taste

Cut the unpeeled potatoes into 1/4 in thick slices.
Boil in salted water with 1-2 tbsp white vinegar until tender (start checking at 10 minutes).
Remove and rinse potatoes with cold water to cool
Add mayonnaise, sour cream, Dijon mustard, and cider vinegar to a large bowl and combine.
Combine bacon, blue cheese, and green onions.
Add potatoes and toss to coat.
Add salt and black pepper to taste.
Can serve immediately but the flavors will meld better over night in the refrigerator.

Notes
I slice the red potatoes into discs to emulate the delicious version you can buy at Central Market.
