Black Bean Slaw

This originally was the accompaniment for roasted butternut tacos, but is just delicious on other tacos or as a filling side salad on it's own.

Ingredients Directions

  • 1 cup / 2.5 oz thinly shredded cabbage
  • 1 can black beans (15 oz), drained and rinsed
  • 1/4 cup green onion (2-3), sliced thin
  • Rough chopped cilantro, to taste
  • 1-2 tbsp lime jiuce, to taste
  • 1 tsp olive oil

  1. Combine all ingredients in a bowl, toss to combine.
  2. Refrigerate for a few hours to marinate.

Notes

I generally just use the finely shredded cabbage in the package. A 10 oz package gets me 4 batches.
