Chaffle: Brown "Wheat"

I've made this with walnut butter, since that's what I had. It came out very good - a bit lighter in color than what I think a pecan butter version would result in.

Ingredients Directions

  • 1/4 tsp xanthan gum
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 50g (1 large) egg
  • 30g (2 tbsp) pecan or other nut butter
  • 15g (1 tbsp) heavy cream
  • 5g (1/2 tbsp) flax meal, optional

  1. Mix the xanthan gum, baking powder and salt in a small bowl until thoroughly combined. This keeps the xanthan gum from clumping.
  2. In a separate bowl or Pyrex measure cup, beat an egg, then add the pecan butter and heavy whipping cream. Whisk until smooth.
  3. Add the dry ingredients to the wet ingredients and beat/whisk until combined.
  4. Use half of the batter in a Dash Mini waffle maker for each “slice” and cook for 3-4 minutes.

Notes

This recipe leaves no mess in the waffle maker at all!

Some adjustments to consider:

  • I'd like to reduce the walnut butter a bit, possible? (maybe from 2 to 1 tbsp).
    • In doing so should I add some psyllium husk?
  • Substitute some of the heavy cream?
    • Doesn't seem that valuable, 50 calories total

Walnut butter recipe:

  • 25g walnuts
  • 5g oil
  • 5g (1/2 tbsp) flax meal, optional
