Cauliflower Mash

I find cauliflower a strong enough substitute for potato mash that I don't miss the potato version at all. It can end up a bit thin/watery if your not careful with the cooking of the cauliflower.

Ingredients Directions
Base:

  • 1 pound of cauliflower
  • Or 1, 1 pound bag of riced cauliflower
  • 2 tbsp unsalted butter
  • 1/4 cup sour cream, optional
  • 3 cloves of garlic, crushed
    • Or roasted garlic, mashed
  • Salt & pepper, to taste

Options:

  • Italian parsley, chopped
  • Chives, minced
  • Bacon, crumbled
  • Cheddar, parmesan, etc. cheese, shredded

  1. Add the cauliflower to boiling water, and cook 7-10 minutes until just fork tender (do not over cook)!
    1. If using pre-riced cauliflower, microwave according to the bag's directions, around 3 minutes.
  2. Drain the cauliflower and puree in a bowl with the butter using a stick blender until mostly smooth.
  3. Stir in remaining ingredients.

Notes

While this could be used as a generic mashed potato substitute I suppose, I have generally used this as part of other recipes like Cottage pie, or chicken pot pie with cauliflower mash topping.
