Cauliflower Mash
I find cauliflower a strong enough substitute for potato mash that I don't miss the potato version at all. It can end up a bit thin/watery if your not careful with the cooking of the cauliflower.

Base:
1 pound of cauliflower
Or 1, 1 pound bag of riced cauliflower
2 tbsp unsalted butter
1/4 cup sour cream, optional
3 cloves of garlic, crushed
Salt & pepper, to taste

Add the cauliflower to boiling water, and cook 7-10 minutes until just fork tender (do not over cook)!
If using pre-riced cauliflower, microwave according to the bag's directions, around 3 minutes.
Drain the cauliflower and puree in a bowl with the butter using a stick blender until mostly smooth.
Stir in remaining ingredients.

Notes
While this could be used as a generic mashed potato substitute I suppose, I have generally used this as part of other recipes like Cottage pie, or chicken pot pie with cauliflower mash topping.
