Chili Oil

The really simple (and still pretty delicious) version is just oil and red pepper flakes, Sichuan peppercorns an interesting option.

Ingredients Directions

  • 1 1/2 cups oil
    • Ideally a vegetable, peanut, or grape seed oil…light olive oil is fine, but it has a tendency to set in the fridge
  • 5 star anise
  • 1 cinnamon stick, preferably cassia cinnamon
  • 2 bay leaves
  • 3 tablespoons Sichuan peppercorns
  • 3/4 cup Asian crushed red pepper flakes (Sichuan chili flakes are the best)

Super simple version:

  1. Heat oil to 350º F in a sauce pan.
  2. Turn off heat and add red pepper flakes.
  3. Let it sizzle a bit and cool naturally until you can transfer it to a storage vessel.
  4. Store in the refrigerator.
