Chocolate Chia Pudding 1

Easy to make, ready in an hour, serves 2-3. Very low carbohydrate.

This is not blended so the chia seed texture will be present, I find it enjoyable though.

Ingredients Directions

  • 1 cup unsweetened nut/coconut/oat milk
  • 1/4 cup heavy cream
  • 2-3 tsp allulose
  • 2 tbsp unsweetened cacao powder
  • 1 tsp vanilla extract
  • 1/4 cup (at most) chia seeds

Options:

  • Other extracts:
    • Coconut, rum, etc.

  1. Combine all dry ingredients except the chia seeds into a bowl and mix.
  2. Add wet ingredients and mix well with a whisk.
  3. Add the chia seeds and mix again.
  4. For the next 15 minutes stir occasionally, the mixture will continue to thicken as the seeds hydrate.
  5. Cover and store in the refrigerator for at least an hour before serving.

Notes

This will not be very sweet with the allulose values in the recipe, but my focus is on minimum carbs.

Use a low carb nut milk for least carbs possible.
