Chocolate Chia Pudding 2

Easy to make, ready quickly, serves 2-3. Very low carbohydrate.

This one is blended so the chia seed texture should disappear.

Ingredients Directions

  • 1 1/2 cup unsweetened almond milk
  • 2 tbsp heavy cream
  • 2 tbsp coconut oil, melted
  • 1/2 cup chia seeds
  • 1/4 cup cocoa powder
  • 2 tbsp allulose (oringinaly 1/4 cup maple syrup)
  • 1 tsp espresso powder
  • 2 tsp vanilla extract

Options:

  • Other extracts:
    • Coconut, rum, etc.

  1. Add all of the ingredients to a high-powered blender.
  2. Blend on high for a minute, or until the pudding is creamy.
  3. Cover and store in the refrigerator for at least an hour before serving.

Notes

This will not be very sweet with the allulose values in the recipe, but my focus is on minimum carbs.

Use a low carb nut milk for least carbs possible.
