Coconut Milk Pudding

A simple desert like pudding that has a reasonable calorie value.

Ingredients Directions

  • 1 can lite coconut milk
    • Or regular if calories allow
  • 1 tsp salt
  • 2-4 tbsp sweetener
  • 1-2 tsp psyllium husk powder (optional)
  • 1-2 tsp extracts (optional)
    • vanilla, almond, coconut, etc.
  • 1 cup chia seeds
  • 1 cup unsweetened almond and/or coconut milk

  1. With a whisk mix together the coconut milk, salt, sweetener, psyllium husk powder (optional), and extracts (optional).
  2. Then incorporate the chia seeds.
  3. Add the almond and/or coconut milk, mix well, and refrigerate before serving.
