Cornmeal Waffles

Cornmeal waffles are my favorite. When done correctly they are very crispy from the cornmeal and waffle maker cooking method.

Ingredients Directions

  • 4 tbsp unsalted butter
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 tsp double-acting baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups buttermilk
  • 1/4 cup pure maple syrup
  • 2 eggs

  1. Melt the butter; set aside.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda and salt.
  3. In another bowl, thoroughly combine the buttermilk, maple syrup and eggs.
  4. Pour the liquid ingredients over the dry ingredients and whisk until the ingredients are just combined.
  5. Stir in the melted butter.
  6. Let stand for a few minutes to let the cornmeal soften before cooking in a waffle maker.
