Cottage Pie Filling
A tasty and filling dish for colder days. Standard recipes already tend towards low carb (except the mashed potatoes!), but the cauliflower mash fixes that and doesn't really taste much different.

Filling:
2 tbsp cooking oil
1/4 cup onions, diced
1 small pepper, diced
1 hot pepper, minced (optional)
1 small stalk of celery, diced
1 tsp salt
2 cloves of garlic, crushed
2 tbsp tomato paste
1 tbsp dried oregano
1 tsp dried thyme
1 pound ground beef
1/2 cup chicken stock
1 tbsp vinegar
1 tsp Worcestershire sauce
5 oz ounces green beans, cut into <1 in lengths
Topping:
1 pound of cauliflower mash, prepared
2 oz of a good melting cheese, shredded

- Preheat oven to 350 f
- Cook the onions, peppers, celery, and salt with the oil until softened.
- Add the garlic, tomato paste, and herbs, cook for an additional 1-2 minutes.
- Add the ground beef and cook until browned, breaking up with spatula/spoon.
- Add the remaining ingredients and cook until the liquid is mostly gone.
- If necessary add a little bit of xanthan gum to thicken.
- Transfer to a casserole dish, top with cauliflower mash and shredded cheese
- Bake for about 30 minutes, finish under the broiler for a couple minutes to further brown the cheese, if desired.
