Fajita Marinade

I've simplified the original, just a bit.
Good for about 2 pounds of meat - I think it's great for both beef and chicken.

Ingredients Directions

  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 4 cloves garlic, pressed
  • 2 tbsp sugar, honey, etc.
  • 1 tbsp chili powder
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1/3 cup canola or other neutral oil

  1. In a medium bowl, whisk together all ingredients except the oil, until sugar is well mixed.
  2. Slowly add oil while whisking constantly.
  3. Place flank steak inside a gallon-sized zipper-lock bag with marinade. Press out air, seal bag, and allow meat to marinate in the refrigerator, turning occasionally, for at least 4 hours and up to a couple of days.
