Fajita Marinade
I've simplified the original, just a bit.
Good for about 2 pounds of meat - I think it's great for both beef and chicken.

1/4 cup soy sauce
1/4 cup lime juice
4 cloves garlic, pressed
2 tbsp sugar, honey, etc.
1 tbsp chili powder
1 tbsp dried oregano
1 tbsp ground cumin
1 tsp coriander
1/4 tsp cayenne pepper
1/3 cup canola or other neutral oil

In a medium bowl, whisk together all ingredients except the oil, until sugar is well mixed.
Slowly add oil while whisking constantly.
Place flank steak inside a gallon-sized zipper-lock bag with marinade. Press out air, seal bag, and allow meat to marinate in the refrigerator, turning occasionally, for at least 4 hours and up to a couple of days.
