Flourless Walnut Cookies

One of the more satisfying keto desert type items I've found, and the carbs are quite good along with the calorie total.

Ingredients Directions

  • 240g (2 cups) raw walnuts
  • 65g (1/3 cup) brown erythritol (or to taste)
  • 6 g (1 tsp) salt
  • 1 large egg
  • 5mL (1 tsp) vanilla extract

  1. Preheat your oven to 350 F (convection if available).
  2. Grind the walnuts in a food processor until the texture of coarse sand, using pulses if required. Do not take to nut butter stage.
  3. Add the erythritol and salt and mix until combined.
  4. Add the egg and vanilla extract, mixing until a unform “dough ball” comes together.
  5. Portion into 12 equal cookies, place on a parchment lined sheet pan, press into a disk, and bake for 15-20 minutes.
    1. My first batch yielded 360g of dough for 12 30g cookies.
