Grilled Nashville Hot Chicken

I looked this up after watching a food YouTuber make (a more authentic, deep fried) hot chicken. This is really tasty.

The biggest change I do is heating the oil to 300-350 F then killing the heat and adding the spice mixture, to help the blooming of the spices that normally occurs when they use the hot frying oil.

I have a feeling this dish is inspired by various Asian techniques (like hot chili oil).

Ingredients Directions

  • 3 tbsp cayenne pepper
  • 1 tbsp brown sugar
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ cup vegetable oil
  • 2 lbs boneless chicken breast or tenders

  1. Whisk together cayenne pepper, brown sugar, chili powder, paprika, garlic powder and oil. Reserve 2 or 3 tablespoons if you want extra hot chicken.
  2. Place chicken in a container and pour marinade over chicken. Refrigerate for at least 2 hours to overnight.
  3. Remove chicken from marinade and grill until done, 8 to 10 minutes. Remove chicken from grill and brush with reserved marinade, if desired.

Notes

I serve sliced on corn tortillas and grilled onion as tacos.

This works with any cut of chicken.
