Herb Rubbed Roast Pork Belly

This recipe is just about documenting this herb rub for pork. 99% of the recipes I find online is for sweet/candied pork belly rubs and glazes. They all completely smother the pork flavor - this one enhances it and lets it shine through.

Ingredients Directions
The Rub:

  • 3 bay leaves
  • 1 tbsp kosher salt
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tbsp black peppercorns

  1. Bake at 475 for 45 minutes, on top of thick sliced onion rounds.
  2. Reduce the temp to 300 and cook an additional 2 hours.

Notes

I've done this with skinless pork belly, but was actually written with skin-on belly originally. Score the skin with a razer about every 1 cm if skin is still on.
