Indian Green Beans

A fairly quick to make green bean side dish. Can use fresh or frozen beans. I find the key is roughly 1 cup carrots and 1/2 onion per 1 pound of beans.

Ingredients Directions

  • 2 tbsp ghee
  • 1 tbsp panch phoran
  • 1 tsp salt
  • 1/2 medium onion, chopped
  • 3/4 cups carrots, sliced thin
  • 1 1/2 tbsp ginger paste
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp black pepper
  • cayenne, to taste
  • 12 oz frozen green beans, frenched
  • 2 tbsp water
  • Salt, to taste
  • lemon or lime juice, to taste
  • Slivered almonds, optional

  1. Heat the ghee in a pan, add the panch phoran and cook until it just starts to pop.
  2. Add the onion and carrots, Sautee for a few minutes until soft and starting to brown.
  3. Add the ginger and garlic, cook for another minute.
  4. Add the coriander, turmeric, black pepper, and cayenne, cook for 30 seconds until aromatic.
  5. Add the green beans and water, cook covered for a couple of minutes until soft, the remove the lid and cook a few additional minutes to reduce the water.
  6. Finish with lemon/lime juice, additional salt, and almonds if desired.

Notes

I made this recipe based on a couple other Indian style green bean recipes I found. I wanted something Indian flavored for green beans, and to use panch phoran (something that wasn't garam masala).
