Instant Pot Short Ribs
A quick and reliable way to turn most any random cut of beef ribs into something delicious.

Onion, diced or cut from pole to pole
Garlic, minced
Tomato or chipoltle paste
1/2 cup dry red wine
2 cups beef stock
Worchestershire sauce
Fresh thyme
Salt
Pepper
Butter
Lemon or lime juice (optional)

Turn Instant pot to Saute setting and add a bit of cooking fat. Once hot pat the ribs dry with paper towels and in batches sear each rib on at least 2 sides. Transfer the seared ribs to a bowl and cook the remaining ribs.
Add the onion and cook until translucent.
Add the garlic and tomato or chipoltle paste, cook for another 1-2 minutes.
Deglaze the pot with the red wine.
Add the beef stock, Worchestershire sauce, thyme, pepper, and salt (to taste).
Return the ribs to the pot and cook on the high setting for 50 minutes with an additional 20 minute natural release.
Remove the ribs to a plate and turn the pot back to saute. Reduce the cooking liquid as desired. Optionally add butter and citrus juice to taste.
