Instant Pot Chicken Bone Broth
This home made broth is a perfect use of a Costco chicken carcass, and is great for drinking and recipes.

Transfer all of the ingredients to the pot
Cook on high pressure for 2 hours. Afterwards allow the pressure cooker to naturally cool/release for about 30 minutes.
Strain the broth into a container, refrigerate for several hours until the fat can be separated.
If there is enough fat, save it for cooking, use the broth as desired.

Notes
If using a store bought chicken, skip the salt and taste the broth afterwards, then add more if needed.
Like the beef version, don't forget the vinegar to help extract nutrients from the bones.
