Instant Pot Chicken Bone Broth

This home made broth is a perfect use of a Costco chicken carcass, and is great for drinking and recipes.

Ingredients Directions

  • 1 chicken carcass
  • 2-3 cups of vegetable scraps:
    • Onion, celery, carrots, garlic
  • Some fresh herbs:
    • Sage, thyme, rosemary, parsley, celery leaf
  • 2 bay leaves
  • 10 black peppercorns
  • 1 tbsp apple cider vinegar
  • 1 tsp kosher salt
    • See note below
  • 10 cups of water

  1. Transfer all of the ingredients to the pot
  2. Cook on high pressure for 2 hours. Afterwards allow the pressure cooker to naturally cool/release for about 30 minutes.
  3. Strain the broth into a container, refrigerate for several hours until the fat can be separated.
  4. If there is enough fat, save it for cooking, use the broth as desired.

Notes

  • If using a store bought chicken, skip the salt and taste the broth afterwards, then add more if needed.
  • Like the beef version, don't forget the vinegar to help extract nutrients from the bones.
