Keto Tortillas
These attempt to mix the caloric benefit of coconut flour tortillas with texture, flavor, and magnesium benefit of almond flour tortillas. The goal is about 80-100 calories per tortilla. With the addition of the sweet corn extract they do get a slight corn flavor, but not quite like the real thing.

20 g almond flour
12 g coconut flour
60 g (~1/4 cup) water
4g psyllium husks (not powder!)
Spices: chili, garlic, onion, etc. (optional)
Pinch of salt
3 drops of sweet corn extract (optional)

In a bowl, mix the almond flour, coconut flour, psyllium husk, salt and optional spices, breaking up any lumps.
Add the water, and optional extract to the mix, stirring until combined. Knead and fold the dough by hand until very well combined. Then let stand at least 10 minutes to thicken.
Divide the dough into 2 (for tacos) equal portions - they should each measure about 50 grams, and shape with tortilla press.
Cook in a cast iron skillet or griddle, additional oil should not be required. They will release easier as they cook.

20 g almond flour: 115 cal
12 g coconut flour: 50 cal
4 g psyllium husks: 10 cal
This puts these right around 90 cal per tortilla.
