Mini Spinach Meatloaves

These make for a nice appetizer, main, or snack - and aren't too caloric since there is a lot of spinach and egg by volume.

Ingredients Directions

  • 1/4 pound ground beef
  • 1/4 pound ground pork
  • 1/4 (50 g) of an onion, diced
  • A bit of pepper, diced
  • 3 cloves of garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste (optional)
  • 1/3 pound (140 g) spinach, chopped
  • 3 eggs
  • 1/3 cup (80 ml) almond or coconut milk
  • 2 tbsp Italian seasoning
  • Salt and pepper, to taste

  1. Sauté the meat, onions, peppers until translucent.
  2. Add the garlic, Worcestershire sauce, and optional tomato paste, cook for a couple of minutes.
  3. Then Add the meat - when cooked add the spinach and continue the sauté for 1-2 minutes, until reduced.
  4. Take off heat and allow to cool during the remaining steps.
  5. Preheat oven to 400 F.
  6. In a bowl, whisk together the eggs, Italian seasoning, salt, pepper, and milk substitute.
  7. Once the oven is ready, the meat mixture should be cool enough to add to the egg mixture (without scrambling it).
  8. Combine all the ingredients and place muffin cup liners into the muffin pan.
  9. Divide the mixture between the 6 muffin cups.
  10. Bake for 12-15 minutes until each muffin is pretty solid. Cook for longer if the muffins are still liquidly.
