Pizza Sauce

A standard pizza sauce, the added Parmesan is key.

Ingredients Directions

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1-2 cloves of garlic, crushed
  • 1 (15 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 2 tbsp grated Parmesan cheese
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp fennel seed
  • 1/2 tsp red or cayenne pepper, or to taste
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1/4 cup red wine

  1. Melt the butter with the oil and add the onion and celery, saute until soft.
  2. Add the garlic and cook 1-2 minutes.
  3. Add the remaining ingredients, except the wine and cook covered on low for 30 minutes.
  4. Add the red wine and cook covered on low for another 30 minutes.
  5. Remove the bay leaf and adjust seasoning if desired.
  6. Cook for a few minutes uncovered if the sauce is a bit too watery.

Notes

This stores well in the freezer. Add sauce to ice cube tray and transfer to Ziploc bag when frozen.
