Chaffle: Savory Coconut

This is a solid base for sandwiches, mini-pizzas, etc.

Ingredients Directions

  • 50g (1 large) egg
  • 40g (1/2 cup) shredded mozzarella
  • 1 tsp coconut flour
  • 1/4 tsp xanthan gum
  • 1/4 tsp baking powder
  • 1/4 tsp garlic powder, optional
  • 1/4 tsp Italian seasoning, optional
  • A pinch of salt

  1. In a small bowl, mix the dry ingredients until combined. This keeps the xanthan gum from clumping.
  2. In a measuring cup beat the egg and mix in the mozzarella cheese
  3. Add the dry ingredients to the wet ingredients and beat/whisk until combined.
  4. Use half of the batter in a Dash Mini waffle maker for each “piece” and cook for 4-5 minutes.
