Sourdough Bread #1

Spicy jalapeno bacon ipsum dolor amet landjaeger turducken kevin jowl tongue cow jerky tail shoulder chicken burgdoggen pork chop prosciutto bacon tenderloin. Prosciutto pork chop cupim salami, turducken andouille biltong fatback bacon shank rump hamburger. Bresaola beef leberkas, ham hock ham alcatra meatloaf flank pig picanha jerky rump. Filet mignon turkey salami, chislic ham hock tail biltong beef boudin chuck capicola.

Ingredients Directions

  • 250 g bread flour
  • 135 g warm (~100 F) water
  • 75 g active sour dough starter
  • 8 g olive oil
  • 5 g salt

  1. Mix the water, starter, olive oil, and salt in a bowl.
  2. Add in the flour. Let stand for 30 minutes.
  3. Do the stretch and fold routine in the bowl, let stand another 30-60 minutes.
  4. Repeat the stretch and fold if desired, or go to the next step.
  5. Form a smooth ball with your hands by turning it in on itself, it should not be too sticky to handle.
  6. Place in a small square loaf pan, place that into a dutch oven. Allow the bread to proof and fill the pan, start baking when grown to your desired size.
  7. Preheat oven to 450 F.
  8. Bake in the dutch oven at 400 F for 20 minutes.
  9. Remove the cover and bake at 400 F for and additiona 20 minutes.
  10. Remove from the pan and cool on a wire rack for at least an hour before serving.

Notes

I'm making a small version. I either cut down the values from original recipe below, or found a “small loaf” recipe there.
