Spinach Salad w/ Bacon Dressing

A pretty simple, pantry ready way to make use of fresh spinach. Customizable with a wide variety of toppings.

Ingredients Directions
The Salad:

  • 3-4 oz of fresh spinach
  • 3 slices of bacon, cooked crispy and crumbled
  • 1/8 red onion, sliced thin
  • 1 hard boiled egg, sliced thin
  • Blue cheese crumbles, optional

The Dressing:

  • 2 tbsp bacon grease
  • 1-2 tbsp shallot, diced fine
  • 1 clove of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp mustard (Dijon, brown, etc.)
  • 1 tsp allulose

  1. Wash and dry baby spinach and place in a large bowl.
  2. Prepare the onion, eggs, shallots, and optional blue cheese crumbles.
  3. Cook bacon over medium heat until crisp. Set aside on paper towels. Set aside the bacon drippings in a cup.
  4. Cook the shallot and garlic briefly until aromatic.
  5. Lower heat to medium-low then add the bacon grease, red wine vinegar, mustard, and allulose. Stir to combine.
  6. Pour the hot dressing over the spinach and toss to combine. Top with red onions, bacon, eggs, and optional blue cheese crumbles.

Notes

This reminds me of a spinach salad my mom used to make on occasion, and I always forget about making myself.
