Sugar-free Pickle Relish
A quick pickle relish to avoid spending way too much money on the tiny jars of this stuff they sell at the grocery store. Also I get to make a bit spicy and less sweet than it usually is.

Dill pickles, diced
Jalapenos, diced
Yellow onion, diced
Garlic, crushed
Celery seed
Ground mustard
A touch of sweetener
Vinegar or pickle juice
Water
Xanthan gum

Combine the vegetables, spices, and sweetener in a pot with a 50/50 mixture of vinegar and water just high enough to cover.
Bring to a boil and cook briefly.
Strain off some of the liquid mixture.
Add a small amount of xanthan gum and whisk over low heat until liquid has thickened.
Cool and store in a jar.

Notes
This is NOT a sterilized long-term storage recipe, just more of a quick-pickle that should be used up within a few weeks.
I've not actually made this iteration yet, so I'll need to refine this recipe.
