Roasted Butternut Squash Tacos

These are a super delicious alterative to my standard chicken, pork, or beef tacos when I'm looking for something a bit lighter and vegetarian friendly.

Should be served with: Black Bean Slaw

Ingredients Directions

  • 1 lb. butternut squash, cut into 1/4-1/2 in cubes
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • Salt and pepper to taste

  1. Preheat oven to 425 degrees Fahrenheit. Line one large, rimmed baking sheet with parchment paper for easier cleanup.
  2. Toss the cubed butternut with the olive oil, chili powder, salt, and pepper to coat all sides.
  3. Bake until tender throughout and starting to brown on the edges, about 30 minutes, tossing occasionally.
